Homemade Schnitzel and Salad
- Gluten Free 
- Dairy Free 
To crumb the schnitzel you will need:
- Almond meal 
- 1 egg 
- Italian herbs 
- Chicken or veal 
- Olive oil 
How to crumb:
- Mix together some almond meal & Italian herbs in a bowl - how much you need will depend on how many pieces of schnitzel you are crumbing 
- Whisk up an egg 
- Dip your meat in the egg allowing excess to drain off 
- Coat with the almond mixture, repeat until you have used up all of your meat 
- Heat some olive oil in a pan & fry off your schnitzels until browned on both sides 
I served my schnitzel with a light salad & a sesame mustard dressing. The salad is a mixture of:
- Spinach 
- Cucumber 
- Capsicum 
- Roasted sweet potato 
Sesame Mustard Dressing:
- 1 tbsp olive oil 
- 1 tbsp apple cider vinegar 
- 1 tbsp organic seeded mustard 
- 1 tbsp tamari or soy sauce 
- 1 tbsp sesame seeds
