Place raspberries in a small saucepan over medium heat. Cook the raspberries, stirring occasionally until they break down. Remove from the heat and stir in the chia seeds and lemon juice. Set aside to cool. Using a fork, whisk together the coconut oil, coconut ugar and egg for the base layer. Stir in the flour. Spread out the mixture over the base of the prepared tray. Spread the raspberry mixture over the top of the base layer. Using a fork, whisk eggs for the topping. Stir in the coconut flakes and coconut sugar. Spoon mixture over the raspberry mixture. Sprinkle with chia seeds. Bake in oven for 35-40 mins, until the top is golden. Set aside to cool completely before cutting. Store in the fridge or freezer!</image:title>

Repeat the layers (mince → ricotta → pasta) about three times, finishing with mince on top. Top and bake Sprinkle evenly with shredded cheese. Preheat the oven to 180°C. Deseed and skin the pumpkin before cutting into cubes. Cut the carrot into cubes. 2. Place the carrot and pumpkin on a tray and season with cumin &amp; olive oil. Bake in the oven for 20 to 30 minutes &amp; remove when soft and golden. 3. Allow veggies to cool for 10 minutes then blend until smooth with the stock. 4. Heat a large saucepan with some olive oil &amp; fry shallots until fragrant. Add the curry paste &amp; cook for a further minute. 5. Pour in the pureed pumpkin and coconut milk &amp; stir. 6. Let simmer on low heat for 10-15 mins. If the soup gets too thick, thin it with a splash of boiling water. 8. Serve immediately with a few slices of fresh bread or pop into air tight containers for weekly lunches!</image:title>

      <image:title>Lunch / Dinner - Spaghetti Bolognese - RECIPE Prepare all vegetables by chopping the spring onion, tomatoes, and mushrooms, and grating the carrots and zucchini. Heat a large pan over medium heat and add the garlic oil. Add the spring onion, tomatoes, and mushrooms to the pan. Sauté for a few minutes until softened. Add the beef mince to the pan, breaking it up with a spatula as it cooks. Once the mince is starting to cook through, stir in the grated carrot and zucchini. Pour in the passata sauce and crumble in the beef stock cube. Stir well and season with mixed herbs. Allow the sauce to simmer on low heat for about 15 minutes, stirring occasionally. Meanwhile, cook the gluten-free pasta according to the package instructions. Drain and set aside. Serve the pasta in bowls, topped with the bolognese.       <image:title>Lunch / Dinner - Homemade Curry and GF Roti Bread - METHOD Begin by cooking the chicken in garlic oil until cooked through Whilst chicken is cooking, prepare veggies by chopping and washing them Combine spices in a bowl and add to the cooked chicken as well as the 2 x bay leaves Add chopped veggies to the chicken and then pour in the 2 cans of coconut milk Let the curry simmer whilst you prepare the roti bread (the curry can simmer for as long as you like.. the longer the better!) Combine buckwheat flour, water and salt in a high speed blender and blend mixture until combined Heat a drizzle of olive oil in a frypan and pour out the mixture evenly, spreading it out so it's quite thin (if it is too thick the roti will taste quite doughy) Ad a few pinches of nutritional yeast onto the top of the pancake while it cooks.. cook on both sides for about 2-3 mins or until the edges start to get crispy Remove from the pan and repeat until all of the mixture is used up, this will make about 3 large roti pancakes Serve curry with rice or just on its own with a side of roti bread Note: This curry will last in the fridge for about 2-3 days and I promise it tastes even better after a day in the fridge!</image:title>

Let this sit while you prepare the other ingredients. In a separate bowl, combine zuchinni, cabbage and carrot. Combine ingredients for the satay sauce in a small bowl of jar. I like to add some hot water to mix it all together. Cook tofu in a saucepan in sesame oil until browned and crispy. Once tofu is cooked, add your veggie mix to the tofu, stir to combine then add your satay sauce. Stirfry this together for a few minutes until veggies are sautéed and the stirfry is hot.  Transfer to a serving bowl and top with sesame seeds &amp; chopped peanuts!</image:title>

      <image:title>Lunch / Dinner - Quinoa &amp;amp; Pumpkin Salad - METHOD Preheat oven to 180 degrees celsius. Add 1 cup of uncooked quinoa to 2 cups of water in a saucepan on the stove. Let cook for 10-15 minutes. Whilst quinoa is cooking, chop pumpkin and season with coconut oil and spices. Bake in preheated oven until cooked through (about 30-40 mins). Once quinoa is cooked, remove from saucepan and let cool. Once pumpkin is cooked, remove from oven and let cool. Combine cooled quinoa and pumpkin in a bowl, top with avocado, goats cheese and coriander. To make the dressing combine 1/2 the juice of 1 lemon with 2 tbsp of olive oil. I suggest adding the dressing as you eat the salad to save it from going soggy. Enjoy cold or slightly warmed in the microwave as a side dish or with your choice of protein.</image:title>

Grate zucchini and sweet potato, chop leek. Add grated zucchini, grated sweet potato, chopped leek, nutritional yeast, flour and salt/pepper into a bowl (separate to eggs) and mix to combine. Add whisked egg and continue to mix until combined. Pour mixture into a lined baking tray and top with some goats cheese. Place in the oven for 35-40 mins until fully cooked through and slightly browned on top. Cut into slices and serve!</image:title>

      <image:title>Breakfast - Gingerbread Piklets with Homemade Rhubarb - METHOD Blend all of the ingredients (except ingredients for decorating and serving) in a blender on low to medium speed until combined. Start with a small amount of almond milk and add as you need, making sure the mixture is not too runny but not too sticky. A thick consistency is good. Once the mixture is blended, heat 1 tbsp coconut oil in a pan on medium heat  Pour mixture into pan &amp; cook each side for 1-2 mins until you see bubbles &amp; then flip. Repeat until you have used up your mixture. I made small piklets for this recipe and which gave me about 9 piklets. You could pour the mixture into bigger circles if you'd prefer or even make tiny ones! Once cooked, serve topped with some coconut flakes, cranberries and honey plus a side of greek yogurt and home made rhubarb! You will find the recipe to my homemade rhubarb here.</image:title>

Melt coconut oil in a small bowl and then add maple syrup and cacao powder - mix to combine. Add the puffed spelt and rice bran cereal to a large mixing bowl and coat with the cacao mixture. Stir gently until the spelt puffs and cereal are coated in the mixture. Transfer to a lined baking tray and bake for 10 mins. Remove from oven and immediatly stir gently. Both mornings we got up and went for a 20 minute walk long the beach, a nice start to our days. Visit Hyams Beach! The beach with some of the whitest sand in the world. Definitely take your swimmers if the weather is warm. But if not, just take a stroll along the white sand beach and take in the amazing scenery. Go for a walk around Huskisson town. Check out the cafes, have a coffee and then take a browse at a few homewares shops! Stop off at Two Figs Winery on your way home! This was about a 35 minute drive from our Air BnB. We have visited this Winery before and we love it. The vineyard is located 12km from Berry and situated on top of one of Mount Coolangatta's foothills with views of the Shoalhaven River. Stay for a tasting, pick yourself up some wine or even just take a look at the view.</image:title>

We spent our time here relaxing in the lounge area and on the outdoor deck, as well as cooking dinner in the kitchen. After our morning beach strolls, we ate breakfast in our cute and cosy kitchen and then made coffees and sat on the lounge with the doors open to the deck - it was bliss! We have found them to be cheaper in most cases and we love getting to experience the town/city as a local. It is also a bonus to have access to kitchen facilities.
