Raspberry Chia Jam Cookies
MAKES 6 COOKIES
- Gluten Free 
- Dairy Free 
INGREDIENTS
- 1.5 cups almond meal 
- 2 tbsp coconut flour 
- A few cracks of pink salt 
- 1 tsp baking powder 
- 3 tbsp melted coconut oil 
- 2 tbsp maple syrup 
- 1 tsp vanilla 
- Homemade chia jam - recipe below 
METHOD
- Preheat oven to 180 degrees celsius 
- Prepare homemade chia jam (recipe below) 
- Combine dry ingredients in bowl & set aside - almond meal, coconut flour, salt and baking powder 
- Combine wet ingredients in a separate bowl - coconut oil, maple syrup & vanilla 
- Pour wet ingredients into the dry ingredients and mix to combine and form a dough - this dough might be crumbly but when you roll into balls it will stick together 
- Roll into balls and flatten in a muffin tin (or on a lined tray) the muffin tin just make it easier so that the cookies stay together 
- Lightly press down on each cookie and scoop 1 tsp of chia jam into the centre 
- Bake for 13-15 mins or until golden brown 
HOMEMADE CHIA JAM RECIPE
INGREDIENTS
- 1.5 cups frozen raspberries 
- 1/4 cup water 
- 2 tablespoons chia seeds 
- 1 tsp cinnamon 
METHOD
- Place raspberries and water in a saucepan on medium heat 
- Stir mixture and cook until the raspberries become soft and break down 
- Remove from heat and stir in chia seeds and cinnamon
